Pizza & Cider

By the end of our harvest season last year, we knew we wanted to explore alternatives to our Smokehouse concept. We love barbeque, but after three seasons of experience we wondered if there might been some other a concept that would be better suited to our priorities– increasing the value for our guests, reducing wastage, managing spikes in demand, achieving consistent quality, and advancing local, ethical and regenerative food and farming.
One of the ideas that we liked a lot was a farm-to-table pizza concept. We loved how we would be able to leverage the talented team of bakers at Wilson’s Bakery to make our house dough. We were also excited about the fact that pizza could be a great way of showcasing some of the amazing local, ethically grown, and regeneratively farmed ingredients in our area. Making high quality pizza with the infrastructure we have on the farm is not going to be without its challenges, but we are excited about the new direction and hope that you will come out and give it a try.
